A healthy and delicious recipe for making Matcha pancakes. I've been looking to cook with Matcha powder for a while, and due to lots of free time in quarantine, I've finally come around to it! The first idea that popped into my head was pancakes. I've served mine with a poached egg, or though you could easily add strawberries or chocolate sauce, or make them a bit sweeter with some extra maple syrup or sugar.


- 1.5 tsp of Matcha green tea

- 40g of Spinach

- 80ml of Milk

- 140g of Self raising flower

- 0.5 tsp of Baking powder

- 2 tbsp of Maple syrup

- 0.5 tsp of Vanilla

- 2 Eggs

- 0.25 tsp of Salt

- Oil for frying


1. Blend the Matcha powder, spinach and milk until smooth

2. Pour the mixture into a bowl with the other ingredients and whisk until smooth 

3. Heat up a frying pan to medium heat and add oil

4. Pour in the mixture to the desired pancake size

5. Cook for two minutes, flip, and cook for two minutes on the other side

6. Enjoy! I've decided to top my pancakes with a poached egg, although there are plenty of other options. You could try: ice cream, strawberries, maple syrup, chocolate sauce, yogurt or anything else you fancy!
